Apricot Bliss Balls

Our little ones have come to a stage where all they want to do is play in the kitchen and pretend to cook. Apricot Bliss Balls are an easy, healthy and toddler safe recipe where the little ones can help you cook and prepare a delicious treat.

Makes about 30 balls, preparation time 15 mins (+30 mins softening time)
2g protein, 5g fat (2g saturated), 4g carb, 2g fibre totalling 67 calories (282kj)

Ingredients:
  • 200g packet dried apricots
  • 1 cup (120g) almond meal
  • 1/2 cup (50g) wheatgerm
  • 1tbs virgin coconut oil
  • 1 tsp vanilla extract
  • 1  cup (80g) desiccated coconut

Method:
  1. Place the apricots in a heat safe bowl and pour over enough boiling water to cover them all. Keep an eye on the little ones during this process. Set them aside for 30m to soften then drain well. Once this is done chop the softened apricots.
  2. Place the apricots, almond meal, wheatgerm, coconut oil and vanilla extract in a food processer and process until a smooth paste forms.
  3. Place the coconut on a shallow plate. Help your little one roll two tablespoons of the apricot mixture into a ball and then dip into the coconut for a coating. Once this is completed place in the fridge to chill and store in an airtight container.
